Food is very important in a boarding school, and Franklin Academy has been lucky to have forged a great sixteen-year partnership with SAGE Dining Services. I do not exaggerate when I say that the SAGE staff over the years has prepared the best school food that I have enjoyed during my 44-year career as an educator. Today’s lunch featured Moroccan Cuisine in addition to more typical offerings as part of SAGE’s Educational Seasonings series to “bring culinary lessons to life in the dining hall.” The menu included:
  • Moroccan Braised Lamb Stew
  • Moroccan Chicken with Lemon & Green Olives
  • Moroccan Vegetable Stew
  • Moroccan-Style Couscous
  • Grated Cucumber Salad with Olives & Oregano
  • Tomato & Caper Salad
  • Steamed Zucchini
